Ibizkus Totem White 2023

The nose opens with bright notes of citrus, apple, and pear. On the palate, medium-bodied fruit is beautifully balanced by a refreshing mineral salinity.

This white wine allows us to highlight the explosive character of the Malvasia grape, combined with the aromatic delicacy of a small-berried Muscat. In its most floral and elegant form, enhanced by ageing in oak and stirring on fine lees, the proximity of this plot to the sea provides the necessary moisture in the form of sea mist, which partly compensates for the low rainfall.

Location: Ibiza

Production: Destemmed grapes pressed cold, debourbage <24 hours, and inoculated with indigenous starter yeasts ("pied de cuve"). Fermented in a single 700 L. French-oak barrel of second use.

Grapes: 88% Malvasia,12% Muscat

Alcohol Content: 12%
