Ibizkus Totem Red 2022

Totem Red is a very limited-production, “single parcel” wine, made only during vintages with exceptional grape quality. Old vines provide the most elegant expression of the local, ungrafted Monastrell from the area of Sant Agustí. A fresh and delicate vintage, medium-bodied, with very fine tannins.

Food pairing: Roast suckling pig, duck confit, or aged hard cheeses.

Location: Ibiza

Production: Grapes destemmed, fermented with indigenous starter cultures (“pied de cuve”) without temperature control, macerated for 24 days.

Grapes: 100% Monastrell (Mourvèdre)

Barrel Type: French Oak

Alcohol Content: 13.5%
