A rare and elegant Spanish white wine made from 100% Jaén Blanca, an indigenous grape variety grown biodynamically on ancient slate soils in Sierra Nevada Natural Park, Andalucía, at 1,100 metres above sea level. Dry-farmed in traditional goblet style with a strict no-intervention philosophy, this white wine is grown the way it has always been in these mountains.

Pale yellow in colour, bright and clear, the nose is expressive and immediately inviting: ripe white fruit, delicate white blossom, and fresh balsamic notes. On the palate, it is smooth, mineral, and beautifully persistent, the high altitude lending a natural freshness and precision that is impossible to replicate at sea level.

Nothing added, nothing taken away, just the purest expression of an ancient, almost forgotten grape and its extraordinary mountain terroir.

Food pairing: Grilled white asparagus, sea bream, or mild goat's cheese.
