Ibizkus Totem Rose 2022

A single-parcel rosé of exceptional elegance, made from ungrafted Monastrell vines grown over a calcareous limestone vein in one of Ibiza's most distinctive vineyard sites. A subterranean stream beneath the soil traps humidity and lowers temperatures, giving this wine a freshness and structure that sets it apart from anything else on the island.

Hand-harvested in 12-kilo crates, pre-selected in the vineyard, and cold-stored for 24 hours before direct pressing, every step is designed to preserve the purity and precision of the fruit. Fermented with indigenous yeasts and aged in French oak, the result is a rosé that is fresh, creamy, and beautifully structured, with depth to match its delicacy.

Food pairing: Crab, langoustines, or a classic Niçoise salad.
