A wine made only when the vintage is exceptional. Totem Red is a single-parcel, limited-production red from the Sant Agustí area of Ibiza, drawn exclusively from old, ungrafted Monastrell vines whose roots reach into the soil, carrying the genetic memory of the island's most ancient vineyards.
Fresh and delicate for all its depth, medium-bodied with very fine tannins and an elegance that sets it apart from anything else in the Ibizkus range. Fermented with indigenous “pied de cuve” yeasts and macerated for 24 days, then aged in French oak. This is a wine of precision, restraint, and quiet authority.
Food pairing: Roast suckling pig, duck confit, or aged hard cheeses.
