Cristina Calvache Syrah 2021

Intense cherry-red colour, with aromas of ripe black fruits, violets, cocoa, and spices. On the palate, it is unctuous, flavourful, enveloping, with good structure and a persistent finish.

Controlled fermentation with maceration of the skins for a period of 10 days at a temperature between 28 and 30°C. Subsequently, malolactic fermentation was carried out at a controlled temperature of 20°C.

Food pairing: Slow-roasted lamb, grilled aubergine, or aged Manchego.

Location: The upper part of the Andarax Valley, on the southern slope of Sierra Nevada, at an average altitude of 1,000 metres, cultivated on trellises on soil composed of sandstone, marl, and limestone.

Grape: 100% Syrah

Ageing: French oak

Alcohol Content: 14.5%
