Pale yellow colour, bright and clear, with marked fruity aromas, white flowers, and balsamic notes, resulting in a smooth, expressive, and mineral taste, with a persistent finish.
Food pairing: Grilled white asparagus, sea bream, or mild goat's cheese.
Location: Vineyards in the Sierra Nevada Natural Park, at an average altitude of 1,100 metres, cultivated in goblet style and dry farming on slate soil.
Production: Destemming, crushing of the grapes, and subsequent maceration with dry ice in a closed press for 2 hours, followed by pressing. Cold settling (8–10°C) of the obtained must for 24 hours. Fermentation of the must for a period of 20 days in stainless steel tanks, at a constant temperature of 15°C.
